How do I stop keying in invoices late at night?
Issue the invoice at the moment the work is done, from your phone, instead of saving it for the evening. In Lucco Boss you tell Mei one line on WhatsApp, she prepares the invoice, and it goes out only after you reply 1. She also lists who has not paid and asks you before any reminder.
Why invoices pile up at night
During the day you are serving customers, so invoices wait. By evening there are ten of them, each needs the customer name, items and prices again, and one mistake means redoing it. The delay also delays your payment.

Invoice on the spot, even a short one. Keep your price list and customer list in one place so you never retype them. Review unpaid invoices once a day, not at month end.
