How can one person manage the accounts of several companies?

Keep the companies apart
Each company needs its own bank account, books, invoice numbers, tax registrations and staff list. Mixing them is how an invoice from one company lands in another's books. Name the companies clearly so nobody picks the wrong one.
Run the same checklist every month
Use the same order each time: record sales and receipts, enter bills, check who still owes, run payroll, then send the pack to the accountant. A checklist turns five companies into one routine.
Know which company a document belongs to
The risky moment is when a message arrives and you must decide which company the order is for. Set a rule, such as one WhatsApp number per company or the company name in the message, and make the system ask when it cannot tell.
